ingredients:- Tomato - 4
Potato - 2
Onion - 1
Red chilli powder - 1 tsp
Ginger - garlic paste - 2 tsp
Cumin powder - 1 tsp
Coriander powder - 1 tsp
Butter - 1 tbsp
Oil - 1 tbsp
Salt to taste
method:-
Cut the top of tomato carefully and lift off like a lid. Take a spoon and carefully scoop the insides and place it in a bowl. Keep the tomato aside and repeat the process for the rest of the tomatoes.
Filling for the stuffed tomato: Boil the potatoes, peel and mash them. Heat oil in the pan and fry the onion till translucent. Add ginger-garlic paste to it and fry for a minute. Then add the mash potatoes, scooped flesh tomatoes, red chilli powder, cumin powder, coriander powder and salt. Cook for 5 minutes and mix well. Fill the tomatoes with filling and top it with butter and bake it for 15 minutes at 180 degree.Serve hot stuffed tomato with indian rice or parathas.You can also garnish stuffed tomato with coriander leaves.
